Currently I’m working on pickling various vegetables from the garden. Whether anyone realizes it or not almost all vegetables and fruits can be pickled. To pickle something all that is truly required at the very least is a combination of water and vinegar, but most people include various spices and seasonings to create a unique flavor combinations with their pickles.
Pickling can also be done with fruits and vegetables where conventional canning does not work and a good example of this is watermelon. To get an idea of the variety of things that can be pickled I would suggest looking for pickling books either online or at your local public library. Also there are a myriad of websites where unique pickling recipes can be found and I usually search for them on Pinterest.
In the picture there are examples of dilly beans, hamburger pickles, dill pickle spears and dill relish.
