This year we picked an estimated 8 to 9 bushels of tomatoes. We got started planting about a month late due to the fact that we have a new baby this year and honestly I didn’t think we were going to get that much from the garden. The reason why I didn’t think we were going to get that much was because the seedlings I had started did not get the correct amount of UV exposure and so I thought they were most likely going to die so I overplanted.
At one point about a month and a half ago I didn’t really see a whole lot of fruit on the vine so I thought wouldn’t get anything so I gave up tending it except for the fact that it didn’t give up on me. Well I guess my garden decided to teach me the lesson of plentiful bounty. Currently in my greenhouse I have almost every shelf filled with tomatoes that will have to ripen and it is heated and there is plenty of light and protection from frost. We picked the last 4 bushels tonight because there was a hard frost expected and now they are safely tucked away with all the other tomatoes. It is our plan to make a ton of recipes out of tomatoes of course.
Some of those recipes include sun-dried “dehydrated” tomatoes, pasta sauce, tomato sauce, stewed tomatoes, a couple of types of salsa, and anything else I can think of. I’m considering asking people out there if they want to learn how to can tomatoes and if they do and they wish to help me with these tomatoes then I will gladly give them a box of food obviously including tomatoes as well as other stuff form my pantry and I have quite the selection.
