Picking Wild Spinach

Over the weekend Jeremiah and I needed to do some work in the garden, which included doing some weeding. But, as I’ve said before most plants are not actually weeds and one of them we picked or I should say harvested was wild spinach. Wild spinach usually grows in an absolute abundance as a “weed” in most people’s gardens and most people don’t realize that you can eat this gift from nature rather than just killing it.

This plant can be eaten at all stages of it’s life from a young sproutling to a fully mature and flowering plant. Although it is said that the leaves take on a little harsher taste as they get older, yet I think they are the best when they first come up and are about 3 to 5 inches tall. That way you can pick the entire plant and consume the leaf and stem while with an older plants you will need to only pick the leaves and or flowers to consume.

So, literally our first harvest from the garden was not all the vegetables we planted, but wild spinach and our next harvest will be a plant called purslane which is a type of succulent that creeps across the ground and makes apparently a delicious soup.
