Today for breakfast I decided to make a crustless ramp quiche. Below is the recipe for the quiche…
4 eggs
1 cup milk
1/2 cup parmesan cheese (high quality shredded)
2 Roma tomatoes
1/4 cup dried ramps
1 cube or 2 Tablespoons ramp pesto
2 cups mozzarella cheese
4 tablespoons ramp butter
(Substitution suggestion – If you don’t have ramps then you can substitute shallots and regular pesto for ramp pesto and herbal butter for ramp butter. Either way it’s a delicious quiche!)
Mix together the eggs, milk, Parmesan cheese, dried ramps and ramp pesto in a mixing bowl. Place the mixture into a pie plate, then place slices of cut tomato on top along with the mozzarella and bake for 35 to 40 minutes until cheese is melted and slightly brown. Then remove from oven and allow to settle and cool slightly then place the ramp butter on top of the warm quiche so that it can melt and spread it out. Once done serve it up and enjoy!
